[Ayumi of Sawada Sake Brewery]
Sawada Sake Brewery is located in Goido, Kashiba-shi, which overlooks Mt. Miwa in the east in the northwestern part of Nara Prefecture, and overlooks Nijozan, a sacred mountain written in the Manyoshu to the west.
It is said that it was founded in 1830 at the end of the Edo period (the first year of Tenpo), when the first generation, Sadashiro Sawada, founded Konya and made sake alongside it. At that time, there was a house in the village that made sake using rice harvested nearby, and the Sawada family seemed to be one of them.
In the Meiji period, the third generation, Sada Juro Sawada, abandoned Konya and started brewing as a sake brewery.
Later, after suffering such as the suspension of storage due to the Pacific War and the death of a successor, in 1953, the fourth generation, Sadaji Sawada established Sawada Sake Brewery Co., Ltd.
Sadako Sawada, who became the fifth head of the family, worked to improve the quality of sake, and in 1975, released a high-ranking brand "Kyogiko". Since then, "Keikko" has become a representative brand of our company and continues to this day.
In the Heisei era, there was a period when in-house brewing was suspended due to various reasons such as the aging of manufacturing workers, but in-house brewing was resumed in 2020. With the absence of a brewer who knew the former sake brewing, Sawada Sake Brewery's sake brewing has revived with the cooperation of other companies in the same industry.

"Sawada Sake Brewery is a small sake brewery. There is no full manufacturing facility. What we can do is make sake brewing faithfully to the basics, with ambition, passion, and politeness. Therefore, in all preparation, we do not miss any minor changes in morror, and we do small preparations that allow strict temperature control and homogeneous fermentation. In addition, we are actively using local raw rice and working on sustainable sake brewing through co-prosperity with local agriculture.
Sake quality inherits the tradition of Nara Sake, which blends umami and sourness, and is characterized by a well-balanced combination of smooth sweetness and rich umami that spreads in the mouth, and a refreshing aftertaste with sour taste. We have received high praise at Japanese sake fairs in Japan and overseas. "
