Under the guidance of a female brewery "Akeko Nishikawa", who strives to carefully make sake that can only be done because it is a small brewery based on the belief of "brewer's thoughts", the tools used for sake breweries and sake brewing under the guidance of a female brewery "Akeko Nishikawa". You can touch the commitment and tradition of sake brewing while observing the tools. At the end of the program, you can try 3 recommended drinks on the day of participation.

Knowing the thoughts of Akiko Nishikawa, who continues to make sake as a female brewery toji.

Nishikawa, the 16th head of the family, succeeded his house and storehouse at the age of 26, and then became Kuramoto Toji. Among the many breweries in Japan, we continue to make sake as one of the few female breweries toji. Based on the creed of "brewing sake brewing that conveys the thoughts of the creator", we try to make carefully that can only be done with a small brewery. Before tasting sake made with this kind of thought, you can learn about your commitment and tradition through conversation with Mr. Nishikawa.

Visit the exhibition room for important cultural properties and sake brewery tools to experience history

Kawai Sake Brewery, where Nishikawa serves as a toji, calls the brand name Jobonjiya, and there is a record that he already ran the brewing business in 1785 in the middle of the Edo period. The main building is designated as a national important cultural property, and it is a magnificent building that is particularly eye-catching in Imaimachi, where you can feel the state of the former Australian merchant.

In this program, you can also visit houses, and it is a valuable opportunity to experience history. In addition, while listening to the brewing process, you can observe the tools you actually used up close. This kind of place has been established based on Mr. Nishikawa's desire to transmit traditional industries and traditional culture from a historical place, convey what has been cultivated over a long time, and move forward without regretting his efforts.

After touching Nishikawa's thoughts and history, you can try three kinds of sake at the end of the program. Mr. Nishikawa chooses and offers three kinds of recommendations for the day. For example, the representative brand "Seisei Otoko" is a sake that has a slightly dry and delicious taste and is popular as a sake that is popular as an auspicious name and is often appreciated. It reflects the desire to be a sake that is close to everyday life. In addition, we will present a small or square as a memory of participating in this program.
