Original experience program "Musubibito: Knowing Traditional Japanese Sake Brewery"

Based on the belief of "brewering that conveys the thoughts of the creator", the tools used in sake breweries and sake brewing under the guidance of a female brewery Tori "Akiko Nishikawa", who is trying to make polite sake that can only be made with a small brewery. You can touch the commitment and tradition of sake brewing while observing the tools. At the end of the program, you can taste 3 recommended liquors on the day of participation.

Points of Program

Knowing the thoughts of "Akiko Nishikawa" who continues to make sake as a woman's brewery.

Mr. Nishikawa, the 16th generation head, took over the house and warehouse at the age of 26, and then became Mr. Kuramoto. Among Kuramoto Tori, which is dominated by men in Japan, he continues to make sake as one of the few women, Kuramoto Tori. Based on the belief of "brewering that conveys the thoughts of the creator", we strive to make polite construction that can only be done with a small warehouse. Before tasting sake made with this kind of thought, you can learn about your commitment and tradition through conversations with Nishikawa.

Visit the house of important cultural properties and the exhibition room of sake brewery tools to experience history.

Kawai Sake Brewery, where Mr. Nishikawa serves as a brewer, calls its name Jobonjiya, and there is a record that it was already in the brewing industry in 1785 in the middle of the Edo period. The main building is designated as a national important cultural property, and it is a magnificent building that stands out in Imaimachi, and you can feel the style of a former Australian merchant.

In this program, you can also visit houses and experience history. You can also observe the tools you actually used up close while listening to the sake brewing process. This kind of place has been set up based on Nishikawa's desire to transmit traditional industries and traditional culture from historical places, convey what has been cultivated over a long period of time, and move forward without spare effort.

Taste the three recommended sakes of the day

After touching on Nishikawa's thoughts and history, you can taste three kinds of sake at the end of the program. Mr. Nishikawa chooses and offers three kinds of recommendations for the day. For example, the representative brand "Seisei Otoko" is a liquor that is somewhat dry and tasteful as a medium-eat liquor, and is often appreciated as an auspicious name. It reflects the desire to be a liquor that snuggles up to everyday life. In addition, as a memory of participating in this program, you will receive a choko or sho.
